Unlike the sweet custard-style pumpkin pie we know today, these early versions often featured layers of sliced or fried pumpkin combined with sugar, spices, and even apple slices. The adaptability of this gourd made it a staple ingredient in early American kitchens.

In 1796, Amelia Simmons’ American Cookery introduced the first recipe for pumpkin pie, simply labeled "pompkin". Some pie purists still opt to roast their own pumpkins, since commercial purees consist of a sweeter, butternut-like squash.
